I need this recipe in my life for two reasons. One, I need my comfort food even on a strict paleo diet. Two, finding ways to incorporate superfood ingredients in my comfort food makes me feel like a damn rock star. It’s like I found a loophole in the clean eating life. This recipe works with any animal fat that you have on hand: butter, ghee, duck fat, pork lard, beef tallow, etc. Simply make sure the fat comes from a good source. For today’s batch, I used grass-fed ghee.
Now, for those of you who get squeamish about the idea of mushroom powder, know that it tastes amazing! Real Mushrooms powders always give my recipes a unique and delicious flavor profile. Plus, the nutritional benefits from pure mushroom extract are phenomenal!
On to the recipe…
(Makes about 8 medium-large biscuits)
1 cup almond flour
1/4 cup tapioca flour
1 teaspoon baking soda
2 tablespoons cordyceps mushroom powder
1/2 tablespoon sea salt
1/2 tablespoon garlic powder
3 tablespoons cold ghee
1 tablespoon apple cider vinegar
1 tablespoon honey
Preheat oven to 350 degrees
In a bowl, combine all dry ingredients and whisk together until all clumps are gone
Add your butter to the dry ingredients and cut or massage the butter into the flour until evenly distributed. It should look slightly lumpy.
In a separate bowl, whisk together all wet ingredients
Add the wet ingredients to the dry ingredients and simply bring all of the ingredients together. Don’t mix. We’re trying to form a thick dough, not a batter.
Use a spoon to place the dough onto parchment paper and shape the biscuits however you like
Bake for 20 minutes or until biscuits turn golden brown
Let cool for 10 minutes
